Golden Oreo mini cheesecakes

Have you tried golden Oreos yet? They are almost the same as regular Oreos but yellow in color and more of a vanilla flavor. Oh so good! I have a serious addiction to these things. Well, after seeing yet another regular Oreo cheesecake recipe pop up in my Facebook feed, I started thinking that I could do this with golden Oreos! I found a mini Oreo cheesecake recipe to adapt and after tweaking it a bit.....I came up with this super easy Golden Oreo mini cheescake recipe. The best thing about this recipe is that it's a small batch, but can be doubled. I prefer the small batch though, because I'm the only one eating these things and I don't need to be making a bunch!

21 Golden Oreos, 14 left whole and 7 coarsely chopped
1 package cream cheese (8 oz) softened
1/2 cup granulated sugar
1/2 tsp vanilla extract
2 large eggs, lightly beaten
1/2 cup sour cream
pinch of salt
Preheat oven to 275°. Put a muffin liner in each of 14 muffin tins.
Put 1 whole cookie in the bottom of each.
Beat cream cheese with an electric mixer at medium speed till creamy. About 1 minutes. Gradually add sugar, beating until well mixed. Slowly add in eggs and vanilla. Continue mixing, adding sour cream then salt.Turn mixer off and stir in chopped cookies by hand.
Divide batter evenly among muffin tin. Bake about 20 minutes or until almost completely set. Place on wire racks to cool.
Refrigerate overnight before serving.
