How to make cookies from cake mix
The recipe was simple:1 box yellow cake mix
1 tsp baking powder
2 large eggs
1/3 cup vegetable oil
1/2 tsp vanilla extract
lots of sprinkles (I used about 1/2 the bottle)
Preheat oven to 350. Mix the cake mix and baking powder in a large bowl. Mix the 3 wet ingredients in a small bowl. I used a whisk. Fold the wet ingredients into the dry ingredients, mix well. Fold in sprinkles. I rolled some into 1 inch balls and dropped them onto an ungreased cookie sheet. The rest I dropped directly into mini muffin tins.

I baked them about 7 minutes for the cookies, maybe 9 for the muffin tin. Don't let them brown...she told me they get too hard when they start to brown. She is not a baker at all, but says these turn out perfect every time and she was right! Thanks Keri! :)
For all the cooking and baking I do I certainly appreciate a easy-peasy recipe like this one! Especially with the busy summer months fast approaching!
